Chef Martin started at Twin on his birthday February 3, 1982, leaving a factory job to take a lower paying position here earning $3.35 an hour as a night clean-up person. Over the next ten years he would serve as busser, laundry assistant, prep cook, breakfast cook, and sous chef. He worked at every kitchen position except Pastry Chef. Talented and eager to learn, he was a young mostly Spanish speaking kitchen staffer trying to soak up knowledge from a mostly French speaking head chef. After 11 years Martin was ready to take over as a head chef just as Twin needed a new Executive Chef and received the opportunity thanks to then Club President Ken Grossman and the GM at the time. It was around this time that Martin married and started a family. Chef Martin notes that the current group of managers and staff at Twin work very well together, positively improving the Twin work experience. He is grateful for member appreciation of our efforts. Favorite memories include Twin employee parties, playing golf on Mondays and beating skilled staff competitors, and trips to New York and Las Vegas to obtain restaurant and menu ideas for the Twin members. In younger days, Martin competed in rodeos. These days, his hobbies are golf, golf, and golf. He also enjoys playing pool and riding horses and working at the family ranch in Mexico.
